Our ConDuo module is a double-contact oven that cooks your product on both surfaces simultaneously between two Teflon belts, acting like two frying pans.
Heat is transferred by conduction on both sides. Conduction provides a homemade appearance and a special texture that neither microwaves, nor air convection or steam cooking systems can achieve. Direct heat generates a Maillard reaction (browning) on burger patties and PAM bacon in less than a minute!
The main goal of our ConDuo double-contact oven is to quickly and evenly increase the core temperature while maintaining a consistent product thickness. This technology is highly powerful and exceptionally efficient for searing and browning.
ConDuo is a very precise and stable double-contact oven. It consistently delivers the same temperature while preserving existing conditions and settings. The distance between the heating plates, cooking time, and temperature can be adjusted. All parameters are saved in our state-of-the-art HMI (Human-Machine Interface). You can store up to 300 recipes!
ConDuo, the double-contact oven, uses steam to continuously clean the Teflon conveyors. Steam enhances cleaning and reduces water and energy consumption.
ConDuo technology is manufactured in the form of cooking modules. These cooking modules are assembled together based on your capacity requirements to build exactly the tunnel oven you need. This additional modularity also allows for combining different heat transfer methods or adding specific modules to cool the product’s surface.
